Depending on your workflow, you might want to alow students to collect any evidence (and in any shape or form) that they so chose.
ΒΆ Allow entries without template
You can do this by navigating to your assignment editor and editing the 'Assignment Details'. Here you should allow students to add 'Free form content'.
Once this option is enabled, students will be able to submit as much evidence, and in the structure of their chosing, as they like.
You can still make use of templates or preset activities to provide some guidance to the students with this option enabled.
